Dill Scallops with Chive Mayonnaise

The sweetness of sea scallops is beautifully complemented by the spicy bite of fresh chives.  This is the perfect end to a summer’s day, and it’s quick so it won’t overheat your kitchen.

Ingredients

  • 1 cup mayonnaise
  • 2 tablespoons chopped chives
  • ½ cup butter, melted
  • ¼ cup dill, chopped
  • ½ teaspoon salt
  • 16 sea scallops (about 2 pounds)

Instructions

  1. In a small bowl, mix mayonnaise ingredients.
  2. Cover and refrigerate until serving, not longer than 24 hours.
  3. Heat gas grill and spray wire grill basked with cooking spray.
  4. Mix butter, dill and salt in a medium bowl.
  5. Stir in scallops until well coated.
  6. Place scallops in basket.
  7. Grill scallops 4 to 6 inches from heat for 8 to 10 minutes or until scallops are white.
  8. Serve with mayonnaise.
