Dill Scallops with Chive Mayonnaise
The sweetness of sea scallops is beautifully complemented by the spicy bite of fresh chives. This is the perfect end to a summer’s day, and it’s quick so it won’t overheat your kitchen.
Ingredients
- 1 cup mayonnaise
- 2 tablespoons chopped chives
- ½ cup butter, melted
- ¼ cup dill, chopped
- ½ teaspoon salt
- 16 sea scallops (about 2 pounds)
Instructions
- In a small bowl, mix mayonnaise ingredients.
- Cover and refrigerate until serving, not longer than 24 hours.
- Heat gas grill and spray wire grill basked with cooking spray.
- Mix butter, dill and salt in a medium bowl.
- Stir in scallops until well coated.
- Place scallops in basket.
- Grill scallops 4 to 6 inches from heat for 8 to 10 minutes or until scallops are white.
- Serve with mayonnaise.
