Green Goddess Dressing

Combining fresh sorrel, mint, and garlic chives, Green Goddess dressing is the perfect topper for a garden salad or an easy dip for fresh crudite.  If you’re in a pinch and don’t have time to make it to the supermarket, substitute whatever fresh herbs you have on hand and create your own unique version of this classic dressing.

Ingredients

  • 1 package fresh herbs salad blend, rough stems removed (about 2 tablespoons chopped fresh sorrel, 2 tablespoons chopped fresh mint and 1 tablespoon chopped fresh garlic chives)
  • 1 teaspoon Anchovy paste
  • 1 small clove garlic, peeled
  • 1/2 tablespoon apple cider vinegar
  • 1/4 teaspoon sugar
  • 1/4 cup olive oil
  • 1/4 cup sour cream or plain yogurt
  • 2 teaspoons fresh lime juice
  • 1 small avocado, pitted

Instructions

  1. In food processor, blend herbs, anchovies, garlic, vinegar, & sugar to create a paste.
  2. Add olive oil in a steady stream, with food processor running.
  3. Blend well, scraping sides of the bowl.
  4. Continue to puree with sour cream, juice & avocado.
  5. Serve immediately over salads, or as a dip for fresh crudités or topping for grilled Tuna.

Quick Notes

Can also be served as a topping for fresh crudites or grilled Tuna.
