Chimichurri Sauce

A traditional Latin American sauce, chimichurri can be used as a marinade and works great as a dipping sauce for grilled shrimp, steak, lamb, chicken kebabs, even pita chips or french fries.  While many versions of chimichurri use mint, this one uses oregano and parsley to create a unique sauce that is both delicious and versatile.

Ingredients

  • 1 cup Italian parsley, loosely packed
  • 3 tablespoons chopped oregano leaves
  • 1 teaspoon red pepper flakes
  • 3 cloves garlic, minced
  • ¼ cup red wine vinegar
  • ½ cup extra virgin olive oil
  • Salt to taste

Instructions

  1. Chop parsley and add to a bowl with oregano, red pepper flakes, garlic and vinegar.
  2. Whisk together.
  3. Add olive oil and whisk until completely blended.
  4. Add salt to taste and serve at room temperature.

Time: 15 minutes

Yield: ¾ cup
