Herbed Ricotta Tart
A sophisticated combination of fresh dill and chives with creamy ricotta, this tart pairs perfectly with fresh salads and light soups. Perfect for a lunch, this tart is filling enough to do double duty as dinner.
Ingredients
- 1 pizza crust
- Cooking spray
- 2 cups green onions, thinly sliced
- 1 1/3 cup ricotta cheese
- ½ cup chives, thinly sliced
- 2 tablespoons dill, minced
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 large eggs, lightly beaten
- 1 large egg white, lightly beaten
- 2 tablespoons Parmigiano-Reggiano cheese, finely grated
Instructions
- Preheat oven to 375° F
- Press dough into bottom and up sides of a 9-inch round removable-bottom tart pan coated with cooking spray.
- Heat a medium nonstick skillet over medium heat.
- Coat pan with cooking spray.
- Add thinly sliced green onions to pan and cook for 5 minutes, stirring occasionally.
- In a medium bowl combine cooked green onions, ricotta cheese, chives, dill, salt, pepper, eggs and egg white.
- Pour mixture into prepared crust and sprinkle with cheese.
- Bake for 35 minutes or until center is set.
- Let stand for 5 minutes before serving.
