Mojito Fruit
Fresh basil gives this fruit salad an intriguing twist. Accented by fresh lime juice and brilliant green flecks of lime zest, blueberries and honeydew are a delicious duo, but it’s the earthy flavor of tender basil leaves that makes this fruit salad memorable.
Ingredients
- ¾ cup sugar
- ½ cup water
- zest of 1 lime
- 1.5 ounces basil, leaves only
- 1 tablespoons fresh lime juice
- 1 pint blueberries
- ½ honeydew melon, balled
Instructions
- Bring water, sugar and lime zest to a rolling boil in small saucepan.
- Reduce heat to simmer for 3 minutes.
- Remove from heat, add basil leaves and let sit for 30 minutes.
- Strain zest and leaves. Stir fresh lime juice into syrup; cool. Pour over tossed fruit and chill for 30 minutes or more.
- Serve in champagne or martini glasses. Garnish with fine lime zest and lavender buds.
Notes
An Italian Prosecco or champagne would complement the fruit beautifully.
