One Hour Italian Sausage Soup
Delivering long simmered flavor in a short amount of time, this soup can be made even more quickly and easily by using a crock pot. Combining sweet Italian sausage with classic Italian flavors like tomatoes, onions, garlic, rosemary, and thyme, this is soup like nona used to make in half the time it used to take her.
Ingredients
- 1 pound Italian sausage
- 1 cup onion, chopped
- 2 cloves garlic, sliced
- 2 carrots,chopped
- 1 tomato, chopped
- 1 can (14 ounces) diced tomatoes with Italian seasoning
- 2 cans (14 ounces each) beef broth
- ¾ cup dry red wine, divided
- 1 package soup blend herbs, chopped (includes 2 tablespoons oregano, 2 tablespoon rosemary and 2 tablespoons thyme)
- ½ cup chives, chopped
Instructions
- Cook sausage in 4 quart soup pot; drain and set aside.
- Deglaze the pot by adding ¼ cup red wine and scrape up the cooked on bits of sausage.
- Stir in onion and garlic; saute for 5 minutes, stirring occasionally.
- Add carrots and cook for an additional 5 minutes.
- Stir in tomatoes, broth, and red wine.
- Simmer for 10 minutes.
- Blend in sausage and fresh herbs.
- Bring to a boil; simmer 30 minutes.
- Discard whole sprigs of herbs; garnish each serving with a sprinkling of chives.

Variations
For a heartier version, add 1 cup small pasta noodles when you add the herbs.
