Prosciutto & Strawberry Crostini

This is a beautiful addition to a sophisticated brunch or an eye-catching and delicious appetizer.   A few leaves of sweet basil add a touch of green that pairs brilliantly with the vibrant reds and pinks of prosciutto and strawberries.

Ingredients

  • 16 Baguette slices, sliced to desired thickness
  • 2 tablespoons olive oil, plus some to drizzle
  • 1 cup fresh strawberries, sliced
  • 8 slices prosciutto, halved lengthwise
  • 16 slices Manchego cheese (or preferred cheese)
  • 16 basil leaves
  • 2 tbsp balsamic vinegar

Instructions

  1. Preheat oven to 375 ËšF.
  2. Brush baguette slices with olive oil.
  3. Spread slices on a baking sheet and bake for 10 minutes, until toasted.
  4. Meanwhile, wrap the prosciutto around the Manchego slices.
  5. Once baguette slices are toasted, top with cheese and prosciutto, layer on the basil leaf and top with a slice of strawberry.
  6. Mix together balsamic vinegar and olive oil and drizzle over the top of the strawberry.
  7. Serve and enjoy!
