Prosciutto & Strawberry Crostini
This is a beautiful addition to a sophisticated brunch or an eye-catching and delicious appetizer.  A few leaves of sweet basil add a touch of green that pairs brilliantly with the vibrant reds and pinks of prosciutto and strawberries.
Ingredients
- 16 Baguette slices, sliced to desired thickness
- 2 tablespoons olive oil, plus some to drizzle
- 1 cup fresh strawberries, sliced
- 8 slices prosciutto, halved lengthwise
- 16 slices Manchego cheese (or preferred cheese)
- 16 basil leaves
- 2 tbsp balsamic vinegar
Instructions
- Preheat oven to 375 ËšF.
- Brush baguette slices with olive oil.
- Spread slices on a baking sheet and bake for 10 minutes, until toasted.
- Meanwhile, wrap the prosciutto around the Manchego slices.
- Once baguette slices are toasted, top with cheese and prosciutto, layer on the basil leaf and top with a slice of strawberry.
- Mix together balsamic vinegar and olive oil and drizzle over the top of the strawberry.
- Serve and enjoy!
