Spring Pea and Mint Salad
Fresh sorrel, mint, and garlic chives brings out the sweetness of fresh peas and tender greens. Tossed with sliced red onion and salty cashews, this salad’s a delicious beginning to a spring evening. Serve with savory croutons for extra crunch.
Ingredients
- 8 ounces frozen peas, thawed
- 1 small red onion, thinly sliced crosswise
- ½ cup cashews, roasted, salted and chopped
- 1 package salad blend fresh herbs, chopped (includes ¼ cup sorrel, ½ cup mint, ¼ cup garlic chives)
- 1 tablespoon olive oil
- 4 cups Mesclun mix
Instructions
- Combine peas, onion, cashews and fresh Salad Blend.
- Toss with olive oil and serve atop mesclun mix.
