Walnut Parsley Pesto
Basil pesto is a classic summertime treat, and for good reason–it’s delicious. But basil pesto all the time can get bland and boring. Liven things up with this Italian parsley pesto that gets added richness from fresh walnuts. This could be your new summer favorite!
Ingredients
- 3 cloves garlic
- 1 cup walnuts, toasted
- 2 cups italian parsley, chopped
- ¼ cup extra virgin olive oil
- ¼ cup parmigiano-reggiano, freshly grated
Instructions
- Combine garlic and walnuts in a food processor and pulse until coarsely chopped.
- Add parsley and process until the nuts are finely chopped.
- Do not pulse to a paste.
- With the motor on, drizzle in the oil.
- Transfer to a small bowl and stir in the parmigiano.
