Fresh Herb Muffins
These savory muffins get plenty of herb flavor from fresh chives and fresh parsley. Perfect in the morning with a pat of butter and a cup of coffee, they also pair nicely with a simple green lunch salad or a hearty homemade dinner.
Ingredients
- 1 envelope active dry yeast
- 2 cups warm water (110 degrees)
- 4 cups self-rising flour
- 3/4 cup melted butter
- 3/4 cup fresh chives, chopped
- 1/2 cup fresh parsley, chopped
- 1/4 cup sugar
- 1 large egg, lightly beaten
Instructions
- Preheat oven to 400 degrees.
- Combine yeast and 2 cups warm water in a large bowl; let stand 5 minutes.
- Stir in flour and remaining ingredients.
- Spoon batter into 2 lightly greased 12-cup muffin pans.
- Bake at 400 degrees for 20 minutes or until golden brown.
