Fresh Herb Muffins

These savory muffins get plenty of herb flavor from fresh chives and fresh parsley.  Perfect in the morning with a pat of butter and a cup of coffee, they also pair nicely with a simple green lunch salad or a hearty homemade dinner.

Ingredients

  • 1 envelope active dry yeast
  • 2 cups warm water (110 degrees)
  • 4 cups self-rising flour
  • 3/4 cup melted butter
  • 3/4 cup fresh chives, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup sugar
  • 1 large egg, lightly beaten

Instructions

  1. Preheat oven to 400 degrees.
  2. Combine yeast and 2 cups warm water in a large bowl; let stand 5 minutes.
  3. Stir in flour and remaining ingredients.
  4. Spoon batter into 2 lightly greased 12-cup muffin pans.
  5. Bake at 400 degrees for 20 minutes or until golden brown.
