Stuffed Zucchini
Fresh oregano and chives brighten the creamy three-cheese filling for these stuffed zucchini slices.  Wonderful alongside grilled chicken or pan-seared tuna steaks, stuffed zucchini can also be served as an appetizer course. The vibrant green of the zucchini next to the golden gleam of cheese and breadcrumbs makes these a beautiful opener for any dinner party.
Ingredients
- 2 medium zucchini
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1/2 small onion, chopped
- 1 clove garlic, minced
- 1/4 cup ricotta cheese
- 1/2 cup Parmesan cheese, freshly shredded
- 1/4 cup shredded mozzarella
- 1/2 cup fresh oregano leaves, chopped
- 1/2 cup fresh chives, chopped
- 2 tablespoons breadcrumbs
Instructions
- Slice each zucchini lengthwise. Hollow out each half leaving 1/4in edge and reserve zucchini.
- Heat butter & olive oil on medium heat, add onion and garlic. Saute for 3 minutes.
- Add reserved zucchini and continue to cook on medium low for 10 minutes until soft.
- Remove from heat, blend in remaining ingredients.
- Stuff each zucchini half, bake for 40 minutes at 350 degrees.
