Basil Tomato Soup
The fresh basil in this tomato soup transforms the average can of tomatoes into a wonderful meal for your family.
Ingredients
- 1 medium onions, diced
- 4 tablespoons olive oil, divided
- 3 cans (35-ounces each) Italian-style whole peeled tomatoes
- 1 can (32 ounces) chicken broth
- 1 cup packed fresh basil leaves
- 3 cloves garlic
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon pepper
Instructions
- Saute onions in 2 tablespoons hot oil in a kettle over medium-high heat for 9 minutes or until tender. Add tomatoes and chicken broth. Bring to a boil, reduce heat to medium-low and simmer, stirring occasionally, about 20 minutes. Process mixture in a food processor or using a handheld blender until smooth.
- Separately, process basil, garlic, lemon juice, salt, 2 tablespoons oil and 1 cup of tomato/chicken broth mixture in a food processor until smooth, scraping down sides. Stir basil mixture, sugar and pepper into soup.
- Cook 10 minutes or until heated through.
