Using Herb Keepers

Keeping your herbs fresh can sometimes be a daunting task with each cut herb having its own shelf life, and recipes calling for various amounts, the desire to use herbs at a later date must often be balanced with room in the fridge, extensive menu planning or the use of other tools that may help you in the race against time.  There are several  so-called Herb Keepers on the market that allow you to immerse the stem of the herb in water much like flowers in a vase in order to keep the fresh herbs hydrated.  Perfect for storing all herbs from parsley and thyme to basil and sage, many herb keepers are made with acrylic, plastic or silicon canisters which house the herbs, protecting them from absorbing refrigerator odors while encouraging proper air circulation and a water compartment that keeps the stems hydrated while leaving the leaves (which are highly sensitive to water damage) unscathed.
