Forget the Chubby Hubby

So, this watching your weight thing is no fun at all. Last night, Tom and Ben had pizza with fresh mozzarella, chicken, and black olives—my favorite!—and I couldn’t even have a bite. I was stuck with salad. Salad! Boring old salad. With light dressing! It was a travesty.

But today I’m perking up and trying some new salad ideas. I’m making a cucumber, tomato, and mint salad to pack up in Tupperware and take to the office for lunch this week. And I’m making a triple batch of my all-time favorite, completely non-fat, creamy fresh herb dressing so that it will be readily available when my hunger pangs kick in around 7:00 p.m. When healthy meals are easy to prepare, it’s easier to eat them and stop yourself from, say, running out to the grocery store for a pint of Ben & Jerry’s Chubby Hubby that you will eat all in one sitting while watching a Real Housewives marathon on Tivo. But who would do a crazy thing like that?
