Tomato & Red Lentil Soup
Perfect for a cold or rainy day, this lentil soup will warm the souls of everyone who is seated around your table. Using fresh ingredients such as fresh basil and tomatoes will help this recipe taste even better. This recipe can also be thinned down and used as a sauce for pasta, if desired; see photo at bottom.
Ingredients
- 2 pounds fresh plum tomatoes, chopped
- 1 cup red lentils
- 4 strips bacon
- 2 onions
- 5 cups chicken stock
- 1 teaspoon brown sugar
- 1 1/2 cups fresh basil leaves
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon oil
Instructions
- Peel and roughly chop the onion, snip the bacon into pieces and rinse the lentils in a colander.
- Cook the onion and bacon in a little oil in a large saucepan, until golden; about 20 minutes. Add the lentils, tomatoes, stock, basil, salt and pepper and stir well.
- Bring to a boil and simmer gently for about 30 minutes. Blend the soup.
