With Easter right around the corner, it’s time to start thinking about how to celebrate. If you’re throwing an Easter brunch or attending a potluck dinner, consider preparing a rich and creamy quiche made even more flavorful by the addition of your favorite fresh herbs.
To keep things simple, start with a frozen piecrust that is eight-inches in diameter. (If you really want to do things from scratch, see our post on piecrust from a few months back). Prebake your piecrust for ten minutes in an oven that has been preheated to 400 degrees Fahrenheit. Once your piecrust has begun to brown slightly, remove it from the oven and let it cool to room temperature.
While your piecrust is cooling, turn your oven temperature down to 375 degrees, and start assembling a basic quiche filling by whisking together 3 eggs, 1 cup heavy cream, 1 cup milk, and a teaspoon of salt.
Now for the fun part: choose the combination of cheeses and fresh herbs you want to feature in your quiche. You will need about a 1cup of grated cheese and a ¼ cup of finely chopped fresh herbs to add to your filling. Our favorite combinations?
- Irish cheddar and fresh dill
- Goat cheese and fresh basil
- Gruyere and equal parts fresh parsley and fresh chives
The choice is up to you.  Simply stir in your favorite pairing, pour the filling into the piecrust, and bake for 25 minutes. Your custom quiche is sure to be a delicious conversation piece, so don’t eat too many chocolate eggs!
