I’ve got a new favorite box lunch! My sister Sarah makes the most fabulous Thai-inspired peanut noodles, and they’ve become my latest obsession. With plenty of flavor from Sarah’s spicy peanut sauce and lots of fresh cilantro, Thai basil, and chopped scallions, you almost don’t notice how many healthy veggies you’re eating. And, it holds up great in the fridge! I know my coworkers are jealous every time I bring it to the office.
Here’s what you need:
- 1 cup smooth peanut butter
- 2 tbsps. soy sauce
- 1 tbsp. sriracha or other chili sauce
- 2 limes, juiced
- 1 package rice noodles, boiled until al dente
- 1 red bell pepper, sliced
- 1Â pound string beans, blanched
- 1 cup fresh cilantro, chopped
- 1 cup fresh Thai basil, chopped
- 1 bunch scallions, chopped
- 1/2 cup salted peanuts, chopped
Then, all you have to do is combine the first four ingredients in a small bowl to create the peanutty dressing; throw the rice noodles, veggies, and herbs into a large mixing bowl; then top and toss with the dressing to combine. Garnish with chopped peanuts and more fresh Thai basil. And, if you need extra protein, try adding roasted chicken or marinated tofu. No more Thai take-out for me; I bring my own!
