A traditional French dessert, clafouti is essentially a fruit-filled pancake. Sweet and refreshing, this one gets an elegant twist from ripe nectarines and green and purple basil. Serve with a dollop of whipped cream or a cold, creamy scoop of vanilla ice cream for a little extra decadence.
What You Will Need:
- a pie pan
- 2 tbsp. unsalted butter
- ½ cup sugar + more for ramekin
- 2 eggs
- ¾ cup of half and half
- 2 tsp. vanilla extract
- 6 tbsp. all-purpose flour
- 2 nectarines, peeled and sliced
- ½ cup green and purple basil leaves + more for garnish
Steps:
Preheat oven to 375 degrees Fahrenheit. Then, grease a pie pan with 2 tablespoons of butter and dust with sugar to keep clafouti from sticking. We like to use a Pyrex plate so you can see the pretty colors through the pan, but use whatever you have available.
In a mixing bowl, whisk together sugar, eggs, half and half, and vanilla.  Add the all-purpose flour, whisking well. Don’t let any lumps survive!
Distribute slices of nectarine around the pie pan; then, scatter basil leaves over the nectarines.
Pour batter over nectarines and basil. Bake in  the oven for 15-20 minutes, until golden-brown and set. Let cool completely.
Serve garnished with fresh basil leaves and vanilla ice cream or whipped cream. C’est magnifique!
