Need a lunch that’s fast and kid-friendly? Â The quesadilla is one of my go-tos because it’s easy and super delicious. Â There’s nothing like crisp tortillas and gooey cheese to make kids and teens swoon. Â But, I feel a little guilty when all I do is feed Ben and his friends a lunch of carbs and cheese. Â So, here’s where the arugula comes in…
Toss a tortilla in a pan; top with a cup of fresh arugula and 1/2 cup of shredded white cheddar; then cover with the second tortilla. Â Cook until cheese begins to melt and arugula begins to wilt. Â Then, flip, toast, and serve, cut in triangles. Â The arugula adds a peppery bite but doesn’t take away from the luxuriousness of the cheese. Â And for those who like a little extra spice, a dash of cayenne pepper and a leaf or two of fresh arugula is the perfect garnish.
