My family has never big fans of the humble pea. Mushy, green, and mild in flavor, peas are the roly-poly side dish that never seem to entirely disappear from the dinner plate. But, I’ve made a new discovery. By adding fresh mint and fresh chives, peas get an herbal pick-me-up that transforms them from the least desirable part of the meal into the most. Thanks to this recipe for Fresh Peas with Mint and Chives, last night I watched, pleasantly surprised, as my husband and son fought over the last serving—not of pizza or lasagna or chocolate cake—but peas.
