Fresh Herb and Ricotta Dip

 

Looking for a refreshing appetizer hearty enough to keep hungry appetites at bay while you’re firing up the grill?  This Memorial Day weekend, I was in exactly that bind.  With friends and family milling around the backyard while my husband slaved over the coals, I knew I needed something to keep guests happy until they had hot burgers and brats in hand.

So, I got online and found this great recipe for Fresh Herb and Ricotta Dip from Leite’s Culinaria.  I had been playing with Melissa Clark’s homemade ricotta recipe earlier in the week (though, of course, any good quality fresh ricotta will do), so I had plenty on hand.  The flavors of fresh chives, mint, and parsley bring out the creaminess of the ricotta. It’s the perfect dip for carrot sticks, radishes, even cherry tomatoes, and it’s divine slathered on slices of toasted French bread.
