I love a good old-fashioned coleslaw. You know—the kind with shredded green cabbage, shredded carrots, and lots and lots of mayonnaise. But sometimes, I want something that’s a little lighter, a little fresher, and a little more colorful. That’s when I turn to my favorite red cabbage and mint slaw. It’s quick, easy, and utterly delicious.
Here’s what you do: First, thin slice and quick pickle a few red onions. Sound hard? It’s simple. All you have to do is slice up your onion; toss it in a bowl; sprinkle it with two teaspoons of kosher salt, and pour over the juice of two limes. Set the bowl in the fridge for an hour, and soon you will have a quick pickled onion packed full of a red onion’s deliciousness without any of its bite.
Once your onions are pickled, toss them and their juices with 1/2 head of shredded red cabbage and a cup of freshly chopped mint. In almost no time at all, you’ve got the perfect side for burgers, brats, pulled pork, you name it. Serves four easily, and I promise your guests won’t even miss the mayonnaise.
