Grilled Margaritaville Chicken
Summer is all about grilling out. Try this Grilled Margaritaville Chicken over a bed of rice for a zesty meal that just may make you feel as though you're island-bound. Cilantro and lime unite, bringing the flavors of this fiesta to life!
Ingredients
- 1 1/2 pounds boneless skinless chicken breast
- 1/3 cup light olive oil
- 1/4 cup fresh lime juice
- 2 tablespoons tequila (alcohol will evaporate)
- 2 fresh garlic cloves, minced
- 1/4 cup fresh cilantro, chopped
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon sea salt
- 1 cup crunchy tortilla strips
Instructions
- Combine cilantro, garlic, cumin, pepper, salt, lime juice, olive oil, and tequila in a bowl. Mix well.
- Place chicken in resealable plastic bag. Pour marinade mixture over chicken, coating it evenly.
- Refrigerate at least 30 minutes (an all day marinade will maximize flavor).
- After desired marinade time is reached, heat grill to 350 degrees (F).
- Spray cooking oil on grill.
- Remove chicken breasts from marinade bag, and place on grill. Discard bag.
- Grill for about 10 minutes (turning after 5 minutes), or until cooked all the way thru. Internal temperature should reach at least 165 degrees (F).
- Serve over a bed of rice, top with crunchy tortilla strips and a lime wedge.
