Minty Melon Salad with Cilantro

Ingredients

  • 4 cups cubed honeydew melon
  • 2 cups cubed canteloupe
  • 2 cups cubed watermelon
  • 2 tablespoons lime juice
  • raw sugar to taste (about1 tablespoon)
  • 1/2 cup chopped fresh mint leaves
  • 1/8 cup chopped fresh cilantro leaves with stems

Instructions

  1. Cut honeydew, canteloupe, and watermelon into about 1 inch cubes.
  2. Combine with chopped fresh mint, cilantro, lime juice, and raw sugar in large mixing/serving bowl. Mix gently until blended well.
  3. Refrigerate at least 2 hours before serving.
  4. As a finishing touch, add a sprig of fresh mint to each serving as a garnish.
