Strawberry Thyme Jam

 

Before the season’s best strawberries are behind us, set aside an afternoon to whip up a sweet and succulent strawberry jam.  This recipe from theKitchn.com uses honey and the lemony fresh flavor of thyme to bring out the rosy tartness of this favorite summer fruit.  Serve it alongside buttered toast, on crackers smeared with goat cheese, or piled high on slices of pound cake topped with fluffy whipped cream.  And don’t forget to preserve some for the coming winter.  When you open a jar this January and taste the sugary tang of summer on your tongue, you’ll be glad you did.
