Cheesy Herb Biscuits with Sage Sausage Gravy

Flavorful biscuits and a savory sausage gravy pair up to bring you a great way to start the day! This country breakfast staple is infused with herbs for a fresh take on a classic favorite. Especially delicious served with eggs of any style or hashbrowns.

Ingredients

    Biscuits
  • 2 cups sifted flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3 teaspoons baking powder
  • 1/3 cup oil
  • 3/4 cup buttermilk
  • 1 tablespoon fresh oregano, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 1/2 tablespoons fresh chives, finely chopped
  • 1/2 cup shredded cheese
  • Gravy
  • 2 pounds unseasoned fresh ground pork
  • 4 tablespoons fresh sage, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 1/2 teaspoon onion powder
  • 2 cups milk
  • 4 tablespoons flour

Instructions

    Biscuits
  1. Heat oven 475 degrees (F).
  2. In a large mixing bowl, combine dry ingredients until mixed well.
  3. Pour oil and milk into a measuring cup, do not stir. Add to dry ingredients and stir with a fork until mixture cleans side of bowl. Mix in fresh herbs and shredded cheese.
  4. Smooth by kneading dough ten times.
  5. Place dough on a piece of wax paper, press out to 1/2 inch thickness.
  6. Cut with an un-floured biscuit cutter, then place on an ungreased cookie sheet.
  7. Bake for 10-12 minutes, or until golden.
  8. Gravy
  9. Place sausage in a large skillet. Add fresh sage and other seasonings. Cook until browned, stirring to combine seasonings with meat.
  10. Meanwhile, place flour in a bowl. Slowly whisk in milk, until thoroughly mixed.
  11. Place mixture in a saucepan over medium heat, stirring constantly until smooth and the desired thickness is reached.
  12. Add thickened flour and milk mixture to seasoned browned sausage and stir until mixed.
  13. Serve gravy over top of biscuits split in half, and enjoy!
