with Fresh Basil and Chives
My friend Ana shared this latke recipe with me when we attended a Hannukah party at her house this past Saturday. The rich and crispy, golden latkes are accented beautifully by the bright flavors of chives and basil, and a little sour cream never hurt anything! Add your favorite herbs to make these latkes your own.
Ingredients
- 6 medium-sized yukon gold potatoes
- 1 large red onion
- 2 large eggs
- 1/2 cup all purpose flour
- 1 tsp. baking powder
- 2 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 1/4 cup fresh chives, minced
- 1/4 fresh basil, minced
- canola oil, for frying
Instructions
- Peel potatoes and onion.
- Using the shredding blade on a food processor, shred potatoes and onions. Pour into a bowl lined with a tea towel and squeeze out the excess water.
- Combine shredded potatoes and onions with eggs, flour, baking powder, salt, black pepper, chives and basil in a large mixing bowl.
- Heat 1/4 inch of canola in a large, shallow pan. Heat oil until it sputters when a shred of potato is dropped in it.
- Scoop tablespoons of potato mixture into the pan and flatten with the back of a wooden spoon. Cook approximately 1 minute on each side, or until golden brown.
- Keep warm in an oven heated to 250 degrees Fahrenheit until ready to serve.
- Serve with sour cream and more fresh chives and basil for garnish.
