Fresh Chive, Red Pepper, and Prosciutto Quiche
This quick and easy quiche tastes like the promise of spring. With warm weather flavors like tangy roasted red peppers, salty prosciutto, creamy Asiago, and oniony fresh chives, it makes a delicious centerpiece to any breakfast, brunch, or lunch. And, it is an excellent reminder that winter is coming to an end, and plenty of fresh, young green things are just around the corner.
Ingredients
- 1 pie crust, frozen or fresh
- 3/4 cup fresh chives, chopped
- 1 roasted red pepper, chopped
- 12 oz. prosciutto, thinly sliced
- 4 oz. Asiago cheese, grated
- 6 eggs
- 1 cup cream
- 1/2 cup water
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
Instructions
- Pre-heat oven to 350 degrees Fahrenheit.
- Take out pie crust, and add chives, red pepper, prosciutto, and grated cheese.
- In a large bowl, whisk together eggs, cream, water, salt, and black pepper.
- Pour egg mixture over ingredients in the pie crust.
- Bake for 1 hour or until golden-brown and slightly puffed.
- Serve when cool, garnished with more fresh chives.
