Summer Berry and Rosemary Parfait

Summer is in full swing, and what better way to a enjoy a harvest of plump berries than with this fresh rosemary infused parfait? The colorful fruit and yogurt layers are richly complimented by fresh rosemary, while a crunch of granola adds the perfect finish. These parfaits are great for entertaining, as they are pleasing to the eye as well as the tastebuds. The decadence of summer awaits, in every bite.

Ingredients

    Rosemary Infusion Syrup
  • Juice from 1 large lemon, strained
  • 1/2 teaspoon vanilla
  • 1 tablespoon fresh rosemary, chopped
  • 1/2 cup brown sugar
  • 1/2 teaspoon molasses
  • Parfait Layers
  • 1 cup vanilla yogurt
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries
  • 2 kiwi fruit, peeled and sliced
  • 10 fresh strawberries, sliced

Instructions

    Rosemary Infusion Syrup
  1. In a small saucepan, combine lemon juice, sugar, molasses, vanilla, and rosemary. bring to a boil, then allow to cool (if in a hurry, sometimes I will place in refrigerator to cool quicker).
  2. Parfait Layers
  3. Place berry varieties in a small bowls, and evenly distribute rosemary infusion syrup over each. Mix well, until berries are coated in the rosemary syrup.
  4. In a glass sundae/parfait dish, layer the infused berries with yogurt.
  5. Top with your favorite granola, grab a spoon, and enjoy!

Notes

Recipe amounts given should yeild 2 large parfaits. Adjust recipe amounts to desired number of parfaits.
