Pizza with Asparagus, Spring Onions and Basil
This pizza is like a slice of summer. Topped with summer vegetables like asparagus, tomatoes, and spring onions, spiced up with salami and topped with lots of cheese, it's easy to make and even easier to eat. Lots of fresh basil is the perfect finishing touch.
Ingredients
- pizza crust, store-bought or homemade
- 2 tbsp. olive oil
- 6-8oz asparagus, diced
- 2 large, fat spring onions, thinly sliced
- 4 oz pizza cheese (we used a mix of asiago, parmesan, and pecorino)
- 3 oz good quality hard salami, diced
- 1 cup cherry tomatoes, halved
- 2 tsp. kosher salt
- 1/4 cup fresh basil, roughly chopped
Instructions
- Preheat oven to 500 degrees Fahrenheit.
- Pour 1 tbsp of olive oil on a pizza pan or cookie sheet and use a pastry brush or paper towel to spread it evenly over the surface of the pan.
- Press pizza dough out into the pan.
- Brush top of dough with second tbsp, of olive oil.
- Sprinkle aspagragus, onions, cheese, salami, and tomatoes over the pizza.
- Sprinkle salt around the crust edge and over the vegetables.
- Bake for 15-20 minutes, or until crust is golden-brown and cheese is nicely melted.
- Let cool for 10 minutes, and then sprinkle with fresh basil. Slice and serve.
