Mint Berries and Cream

Ingredients

  • 10 ounces fresh strawberries, hulled and quartered
  • 1 ¼ cup fresh raspberries
  • 1 ¼ cup fresh blackberries
  • 2/3 cup fresh blueberries
  • 4 tablespoons sugar
  • 2 tablespoons fresh lemon juice
  • 4 tablespoons fresh mint leaves, chopped very finely
  • ½ cup mascarpone cheese
  • ½ cup whipping cream
  • Pinch ground cinnamon

Instructions

  1. Toss the berries, 2 tablespoons sugar, lemon juice and fresh mint in a medium bowl. Let stand until juices form, tossing occasionally, about 30 minutes.
  2. Stir the mascarpone cheese in a large bowl and stir to loosen.
  3. In a separate bowl, combine the cream, remaining 2 tablespoons of sugar and cinnamon and beat with an electric mixer until soft peaks are formed.
  4. Fold the cream into the mascarpone cheese.
  5. Divide berries among plates and spoon mascarpone cheese mixture atop the berries. Drizzle berry juices around dessert and serve immediately.
