Radish and Chive Bruschetta

Radish and Chive Bruschetta

Inspired by Lynn Rossetto Kasper of The Splendid Table fame, this recipe is a quick and easy starter for a sunny, summer dinner part. The sharp bite of the radishes is softened by the creamy goat cheese and oniony chives. A delectable bite.

Ingredients

  • crusty loaf of French bread
  • 2 cloves garlic
  • ¼ cup extra-virgin olive oil
  • 8 oz. soft goat cheese
  • 4 small radishes, thinly sliced
  • 3/4 oz. chives, minced
  • salt
  • fresh cracked pepper

Instructions

  1. Pre-heat oven to 350 degrees Fahrenheit.
  2. Thinly slice French bread on an angle so that pieces are approximately ½ inch thick.
  3. Rub each slice of bread with garlic clove and brush with olive oil.
  4. Arrange on a baking sheet and toast for 5-10 minutes turning bread half way through.
  5. Remove toasts when they are lightly golden brown.
  6. Once toasts have cooled spread each with a tablespoon of goat cheese.
  7. Thinly slice radishes by hand or with the help of a box grater or mandolin.
  8. Arrange three slices of radish on each toast and press in slightly.
  9. Sprinkle each toast with a generous teaspoon of minced chive.
  10. Sprinkle with salt and pepper and serve at room temperature.
