Radish and Chive Bruschetta
Inspired by Lynn Rossetto Kasper of The Splendid Table fame, this recipe is a quick and easy starter for a sunny, summer dinner part. The sharp bite of the radishes is softened by the creamy goat cheese and oniony chives. A delectable bite.
Ingredients
- crusty loaf of French bread
- 2 cloves garlic
- ¼ cup extra-virgin olive oil
- 8 oz. soft goat cheese
- 4 small radishes, thinly sliced
- 3/4 oz. chives, minced
- salt
- fresh cracked pepper
Instructions
- Pre-heat oven to 350 degrees Fahrenheit.
- Thinly slice French bread on an angle so that pieces are approximately ½ inch thick.
- Rub each slice of bread with garlic clove and brush with olive oil.
- Arrange on a baking sheet and toast for 5-10 minutes turning bread half way through.
- Remove toasts when they are lightly golden brown.
- Once toasts have cooled spread each with a tablespoon of goat cheese.
- Thinly slice radishes by hand or with the help of a box grater or mandolin.
- Arrange three slices of radish on each toast and press in slightly.
- Sprinkle each toast with a generous teaspoon of minced chive.
- Sprinkle with salt and pepper and serve at room temperature.
