Mama’s Best Meat Sauce
Nothing says comfort like a warm bowl of pasta topped with rich, satisfying meat sauce and lots of Parmesan cheese. With Italian sausage, ground veal, bacon, and a secret ingredient (pepperoni!?!), Mama’s Best Meat Sauce is all the coziness of a big Italian Sunday supper in a saucepan.
Ingredients
- 1 lb. Italian sausage (sweet or hot), casings removed
- 1 lb. ground veal
- ¼ lb. bacon
- ¼ lb. pepperoni, diced
- 1 onion, grated
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 2 tsp. fresh oregano, minced
- ½ tsp. red chili flakes
- ¼ cup red wine
- ½ cup chopped green olives
- 1 29 oz. can crushed tomatoes
- 1 tsp. salt
- 1 tsp. black pepper
- ½ cup fresh basil, rough chop
- ½ cup fresh parsley, rough chop
Instructions
- Brown sausage and veal in a large saucepan over medium heat. Remove, keeping drippings in pan.
- Brown bacon and pepperoni in same saucepan over medium heat. Remove, keeping drippings in pan.
- Add grated onion and bell pepper to drippings and sauté until softened.
- Add garlic, oregano, and chili flakes and sauté for two minutes.
- Add red wine and cook until wine has almost entirely evaporated (about five minutes).
- Add green olives, tomatoes, salt, and black pepper. Simmer on low for fifteen minutes.
- Stir in basil and parsley and simmer for two minutes. Serve over pasta and top with Parmesan cheese and more fresh basil and parsley.
