Mixed Berry Parfait with Honey-Thyme Yogurt and Quick Granola

Mixed Berry Parfait with Honey-Thyme Yogurt and Quick Granola

Homemade granola? Of course! This parfait wouldn't taste the same without it. While the fresh basil and mint add richness to the berries, the fresh thyme gives the yogurt an extra dose of zip. Combine the ingredients in a wine or champagne glass and you are serving in style.

Ingredients

    Fruit and Yogurt
  • 1 pint each of strawberries cut in quarters, blueberries, raspberries and blackberries
  • 2 tablespoons fresh Basil, thinly sliced
  • 2 tablespoons fresh Mint, thinly sliced
  • 1 pinch sugar
  • 2 cups low fat plain or vanilla yogurt
  • 3 tablespoons honey
  • 1 lemon, juiced and zested
  • 1 teaspoon nutmeg
  • 1/2 tablespoon chopped fresh Thyme
  • Quick Granola
  • 2 cups Quaker oats
  • 1/4 cup pecans
  • 1/4 cup pumpkin seeds
  • 1/4 cup raisins
  • 3 tablespoons maple syrup
  • 1 tablespoon cinnamon
  • 3 tablespoons of oil of choice, I like canola or sunflower

Instructions

    Fruit and Yogurt:
  1. Place fruit, fresh basil and fresh mint in medium bowl and toss together. (You should do this a day ahead of time to let the flavors of the fresh herbs really shine.)
  2. Place sugar, yogurt, honey, lemon juice and zest, nutmeg and thyme in a bowl and stir to combine.
  3. Quick Granola:
  4. Preheat oven to 375 degrees.
  5. Combine oats, seeds and nuts in a large bowl.
  6. In a separate bowl or cup, combine maple syrup, oil and cinnamon.
  7. Mix well, and then pour over the oat mixture.
  8. Stir well to coat.
  9. Place the granola onto a baking sheet lined with parchment paper.
  10. Bake at 375° F for about 15 to 20 minutes, until the oats flakes are brown at the edges.
  11. Remove from heat, let sit until it reaches room temperature.
  12. Assembly:
  13. Place fruit in the bottom of a wine or champagne glass.
  14. Drizzle with yogurt.
  15. Next, layer with granola.
  16. Add more fruit and continue the layers until glass is full.
  17. Serve and enjoy.
