Arugula Salad with Almonds and Parmesan

Peppery arugula pairs perfectly with toasted almonds and the salty bite of Parmesan cheese.  The lemon vinaigrette lends this salad plenty of citrus flavor, and it’s a valuable dressing recipe to have in your repertoire.

Ingredients
  • 1/3 cup toasted almonds
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons balsamic vinegar
  • coarse salt and ground pepper
  • 1 bunch arugula, trimmed
  • 1/3 cup Parmesan

Instructions

  1. In a large bowl combine almonds, oil, lemon juice and vinegar.
  2. Season with salt and pepper.
  3. Add arugula and Parmesan and toss to coat.

Time: 10 minutes
