Purple Basil Peaches
It’s hard to believe that fresh peaches can ever get old, but as summer days lengthen, even the sweetest summer harvest can lose its early summer glamor. Not to worry! Toss your extra peaches with purple basil, lime zest, a little extra sugar, and voila… Purple basil peaches never get old.
Ingredients
- 4 firm peaches, peeled, pitted and quartered
- 2 cups loosely packed purple basil leaves
- 1 teaspoon grated lime zest
- 1 cup sugar
Instructions
- Place peaches and basil in a medium bowl and set aside.
- Combine lime zest, sugar and 1 cup water in a medium saucepan.
- Bring to a boil, stirring to dissolve the sugar.
- Lower the heat and simmer for 2 minutes.
- Pour hot syrup over peaches and basil.
- Cover and chill for 2 hours.
Time: 25 minutes plus 2 hours to chill
