Cucumber Mint Sandwiches

For a crisp healthy snack, try Cucumber Mint Sandwiches! Wether you're embarking on a backyard picnic, or enjoying tea time on the veranda, these appetizing little dandies will be sure to cool off your afternoon.

Ingredients

  • 8 ounces cream cheese (softened)
  • 2 tablespoons mayonnaise
  • 1 tablespoon salted butter (softened)
  • 1/2 small fresh garlic clove, very finely minced
  • 3/4 cup chopped fresh mint leaves
  • 2 english cucumbers (peeled or unpeeled)
  • 1 loaf textured bread

Instructions

  1. Combine cream cheese, mayonnaise, butter, garlic, and mint. Mix very thouroughly.
  2. Peel cucumbers if desired, to add a bit of a fancy touch, peel vertical stripes.
  3. Remove ends.
  4. Slice cucumbers to desired thickness (1/4 inch thickness gives a nice crunch).
  5. Spread minty cream cheese mixture on both sides of bread. Any type of bread will do, based on individual taste.
  6. Place cucumber slices on one slice of bread, top with remaining slice.
  7. Cut in half, plate, and serve. Especially delicious served with cottage cheese.
