My family is cutting back on store-bought sweets and fattening baked goods, but sometimes, even the healthiest of families needs to find a way to indulge a little. In the summer, fresh fruit is an especially easy and enjoyable substitute for cakes and cookies, and it can be fun to try out what’s new and in season in the produce section.
Last night, I whipped up a quick and dreamy dessert of cloud berries and cream. A cousin to the raspberry, the cloud berry is lighter in color, ranging from white to orange, and is often sweeter than its ruby red relatives. Topped with a little raw sugar and fresh mint, cloud berries and cream is a sweet and satisfyingly light end to a hot summer’s day. And if you need a little something extra, you can always serve it with a SMALL cookie (or two) on the side.
