Cucumber, Melon, and Mint Salsa
Combining the rich orange tones of cantaloupe with the pale green hue of honeydew and cucumber, this sweet salsa gets a kick from fresh jalapeno and mint. User over roasted swordfish, grilled mahi-mahi, or even as a dipping sauce for coconut shrimp.
Ingredients
- 1 cup cubed (½ inch) honeydew melon
- 1 cup cubed (½ inch) cantaloupe
- ½ cup cucumber, peeled and diced
- ½ cup red onion, diced
- ¼ cup mint leaves, chopped
- 1 teaspoon grated lime rind
- 3 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 2 teaspoons minced jalapeno pepper
- 1 teaspoon sugar
- ½ teaspoon salt, divided
- ¼ teaspoon pepper, divided
Instructions
- Combine all ingredients in small bowl and stir to combine well.
- Serve with grilled chicken or fish.
