Strawberries and Mint Creme
Designed for those who value complexity of flavor over saccharine sweetness, this dessert combines tart, fresh strawberries with the spiciness of fennel, peppercorns, and cardamom. Topped with a luxurious, mint-spiked whipped cream, strawberries have never been so sophisticated.
Ingredients
- 1 cup heavy cream
- ½ cup mint, leaves and stems
- 1 quart strawberries, divided
- ½ cup zinfandel
- 6 peppercorns
- 1 teaspoon fennel seeds
- 1 cardamon pod
- 3 tablespoons sugar
Instructions
- Bring the cream to a boil and immediately submerge the mint; cover and remove from heat to steep for 30 minutes.
- Cool, discard the mint and set aside.
- Bring 1 pint of strawberries to a light boil with remaining ingredients.
- Simmer for 30 minutes.
- Cool and discard the spices.
- Slice 1 pint of strawberries.
- Divide cooked and sliced strawberries into 6 martini glasses.
- Pour minted creme over each and garnish with remaining mint leaves.
