Salty ‘n’ Sweet Home Fries with Fresh Thyme

Yield: 6 servings

These home fries are crispy, salty, and a little bit sweet from the use of garnet sweet potatoes as well as hearty russets. Tossed up with plenty of fresh thyme, these home fries are a great side to omelets and frittatas, but they're also delicious all by themselves.

Ingredients

  • 2 russet potatoes, peeled and diced into half inch pieces
  • 2 garnet sweet potatoes, peeled and diced into half inch pieces
  • 2 tbsp. olive oil
  • 1 bunch fresh thyme sprigs
  • 1 tbsp. salt

Instructions

  1. Preheat ove to 425 degrees Fahrenheit.
  2. Toss diced potatoes together with olive oil, salt, and fresh thyme sprigs and spread out on two foil-lined baking sheets.
  3. Bake for 45 minutes, flipping potatoes occasionally, until their outsides are crisp and golden-brown.
  4. Serve hot and garnish with more fresh thyme.
