Watermelon Water
with Fresh Mint and Thai Basil

I have a new favorite post-yoga drink that I thought I’d share with you all.  It’s quick and refreshing, and it restores your electrolytes without all the extra calories and processed sugars of a bottled sports drink. It’s watermelon water with fresh mint and Thai basil, and it’s simple.

Just muddle half a cup of fresh mint and half a cup of Thai basil leaves in 2 cups of cold water. While the herbs steep, scoop out the flesh of half a watermelon, and  add a pinch of salt and the juice of one lime. Then, pour the muddled herb water through a sieve over the melon.  Use a stick blender or a food processor  to puree until smooth.   Serve over ice, garnished with a sprig of fresh mint or Thai basil.  Leftovers keep in the fridge for up to five days so  you can stay cool and refreshed all week long.
