Garden Rub by Chef Ryan Zale

A staple at the Local Chop & Grill House in Harrisonburg, VA, Chef Ryan Zale shares a variation on a rub he uses to finish many entree meats. Sprinkle this Garden Rub on meats just before serving.

Ingredients

  • 2 ounce fresh Parsley, finely chopped
  • 1 ounce fresh Thyme, finely chopped
  • 1 ounce fresh Rosemary, finely chopped
  • 1 ounce fresh sage, finely chopped
  • 1 tablespoon lemon zest

Instructions

  1. Combine all ingredients together.
  2. Store in a tightly sealed container for up to 4 days.
  3. Use Garden Rub on grilled meats such as steaks, chicken or rabbit loin, as shown in photo. See the recipe for Mustard Marinade to use on the chicken or rabbit loin here.
