Shrimp Cocktail with Dill Aioli

This aioli pushes the fresh flavors of garlic, lemon, and dill to the forefront of your palette, delightfully complementing the sea salt sweetness of steamed shrimp. Ingredients

  • 1 lb. shrimp, peeled, deveined, steamed, and chilled
  • 1 egg yolk
  • 1/2 cup vegetable oil
  • 1/4 cup extra-virgin olive oil
  • 4 garlic cloves, minced
  • 2 tbsp. fresh lemon juice
  • 1 tsp. kosher salt
  • 1/4 tsp. cayenne pepper
  • 2 tbsp. fresh dill

Instructions

  1. Separate the egg yolk from the white and place it in a medium-sized bowl.
  2. Whisk the egg yolk while slowly drizzling in the vegetable oil and, then, the olive oil in a thin, constant stream. The egg yolk should lighten in color and the mixture should become thick and creamy. (If this looks familiar, it could be because this is the first step in making mayonnaise!)
  3. Whisk in minced garlic, fresh lemon juice, kosher salt, and cayenne pepper. Season to taste.
  4. Stir in fresh dill just before serving alongside the steamed shrimp.
  5. Garnish with more fresh dill and enjoy!
