Cucumber, Tomato and Mint Salad

This easy summer salad combines the refreshing flavors of cucumbers, ripe tomatoes, and fresh mint.  A perfect accompaniment to everything from hamburgers to grilled fish, this side dish is almost as versatile as it is delicious, and it keeps in the fridge for up to a week.

Ingredients

  • 1 cucumber, peeled, seeded and cut into slices (about 2 cups)
  • 3 tablespoons red wine vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 2 tomatoes, seeded and coarsely chopped (about 1 1/3 cups)
  • 4 green onions, chopped (about 1/2 cup)
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons extra-virgin olive oil
  • salt and black pepper

Instructions

  1. In a large bowl, combine cucumbers, vinegar, sugar and salt and let sit for 30 minutes.
  2. Add tomatoes, green onions, mint and olive oil. Gently mix to combine. Season to taste with salt and pepper.
