Whole Wheat Biscuits with Sausage Gravy,

This “healthy” twist on a comfort food favorite is perfect for breakfast, lunch, or dinner. The fresh sage brings out the warm and cozy flavors of hearty sausage and creamy gravy, while fresh chives add a dash of green and a bit of fresh onion zing.  This will stick to your ribs, but the whole wheat flour in the biscuits should ease your conscience a little.  Just think of all that extra fiber you’re getting!

Ingredients

Biscuits:

  • 1 1/4 cups flour
  • 1/2 cup whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • 3/4 cup buttermilk, plus more for brushing

Gravy:

  • 2 tablespoons canola oil
  • 1 pound ground turkey
  • 3 tablespoons chopped fresh sage leaves
  • 2 chipotles in adobe, minced
  • 2 tablespoons whole wheat flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups milk
  • 2 tablespoons chopped fresh chives

Instructions

  1. Make the biscuits: Preheat oven to 425 degrees. In a medium bowl, whisk together the first 5 ingredients. Using a pastry blender or two knives, cut in the butter until the mixture resembles course meal. Stir in 3/4 cup of buttermilk just until a dough forms.
  2. Turn the dough onto a work surface and knead just until it comes together. Roll out the dough 1/2 inch think and cut out four 3-inch rounds. Put the scraps together and reroll, stamp out 2 more rounds. Place the biscuits on a baking sheet and brush tops with buttermilk. Bake for 20 minutes or until the biscuits have are risen and a golden brown.
  3. Meanwhile, make the gravy: In a skillet, heat the oil. Add the turkey. Cook over medium heat, breaking it up until browned, about 5 minutes. Stir in the fresh sage leaves, chipotles, salt, pepper and flour and cook for 1 minute. Add milk and simmer, stirring until thick, about 5 minutes. Add fresh chives.
  4. Split the biscuits, top with gravy and serve.
